Homemade Granola

I had a go at a new recipe for some homemade granola squares and they turned out really chewy and filling. Perfect energy food during a hike or just for an afternoon boost at work (an alternative to the coffee jolt break ;)

I picked a recipe from smittenkitchen.com, another food blog I've been following. The SK recipe gives a lot of leeway, but they give a basic recipe that you can just adjust to your taste. After a run to my neighborhood natural foods store, I came home with bags upon bags of ingredients for the granola squares. In the end, my granola mix was comprised of rolled oats, whole almonds, shredded coconut, dried cranberries, ground flaxseed and to bind, I opted for a maple syrup and raw wildflower honey mix. In the end, I had 16 gooey squares from the oven. They are a bit difficult to get out of the baking dish, but the recipe has a parchment paper tip and after some fuss the squares survived.

I'm thinking next time, chocolate chips, dried sour cherries, almond butter and honey are going into my next batch of granola squares! How would you do your granola?
