Now, for the tiramisu purists out there, this recipe does not use raw eggs. I have made tiramisu before using eggs, the double-boiler, etc. But I wanted a quick and friendly recipe that didn't use raw eggs. Sometimes I get nervous serving raw eggs, especially when other people will be eating it. I'd hate to have someone get sick from something I cooked, or in this case, didn't cook. So here is a quick recipe for tiramisu that I think is just as rich and yummy, and it's super fast to make too!
Ingredients
1 cup Heavy whipping cream
1 cup Mascarpone cheese
3 tablespoons granulated sugar
1 package ladyfinger cookies (approx. 24)
Amaretto liqueur
10 oz strong coffee
Hazelnuts
Chocolate shavings or cocoa powder
1. Whip the heavy cream in a mixer with the sugar. Add the mascarpone and continue to mix. Add a splash of amaretto to the batter, roughly 2 tablespoons.
2. Prepare the strong coffee and add a splash of amaretto.
3. Line the bottom of a 9x5 loaf pan with ladyfingers. Add the spoonfuls of the coffee liquer to the ladyfingers until they are just moist, but not drenched.
4. Cover the layer of cookies with a layer of the cream mixture.
5. Alternate cookies with coffee liquer and cream. Approx. 3 layers of cookies. Top layer will be cream.
6. Add rough chopped hazelnuts and shaved good chocolate to the top. Refrigerate for several hours to overnight, the longer the better!
