I love me a yummy, noodle bowl. There is a noodle and dumpling shop downtown, but not worth the time to go there for every noodle bowl craving. There's always the option for a prefab bowl of the just add water kind, complete with a packet of powdery spices and rehydrated veggies to be added before microwaving.
Today, I attempted to replicate the downtown noodle bowl with a quick healthier noodle substitution and I'm quite pleased with the result. Lunch is served!
Ingredients
Soba - Japanese Buckwheat Noodles with Wild Yam (served cold)
homemade peanut sauce (peanut butter, peanuts, water, skim milk, tamari, chili powder)
toasted sesame seeds
cucumber sticks
